The ingredients needed to make Baked Mac and Cheese:

    1. Get 60 gr unsalted butter
    2. Take 90 gr all purpose flour
    3. Make ready 2 1/2 cups milk, I used skim
    4. Make ready 1/4 tsp kosher salt
    5. Prepare 1/4 tsp paprika powder or pinch
    6. Prepare 1/2 tsp black pepper
    7. Take 2 1/2 cups finely sfinely shredded mild cheddar cheese, I used mix of yellow & red cheddar cheese

One, is that bad mac and cheese is both baked at too high of a temperature and for far too long. The combination of both makes the milk solids separate.

    Instructions

Instructions to make Baked Mac and Cheese:

    1. Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a baking dish. Bring a large pot of lightly salted water to a boil. Cook pasta according to aldente level. I recommend cooking the pasta a minute less than the directions. Drain and set aside for a few minutes.
    2. To prepare roux, melt butter into a medium saucepan over medium heat. Once melted whisk in flour, salt, pepper and paprika powder. Stir and cook for 2-3 minutes. Slowly whisk in milk, stirring continuously until thickened, about 2 minutes. Reduce heat to a simmer and stir in cheese until melted.
    3. Transfer cooked pasta to large dutch oven or pot over low heat. Pour cheese sauce over top, stirring to combine, toss lightly. This is a thick and creamy sauce. Do not mix too thoroughly, it's better left messy. To thin the sauce, add a few tablespoons of milk at a time until at desire consistency. Pour into the prepared baking dish. Sprinkle with mozarella cheese over the top.
    4. Bake in the preheated oven until cheese is melted, about 8-10 minutes, then turn the oven to broil. Broil for about 5 minutes to brown the top. Makes 6 servings.

This baked mac and cheese is a family favorite recipe, loved by both children and adults. It uses a combination of cheeses, layered in the dish as well as melted into a rich and creamy cheese sauce, for the ultimate in cheesy deliciousness! Perfect for a comforting dinner or as a holiday side dish! Other cheese that work: mozzarella, jack cheese or pepper jack for a little zip, American and Velveeta as well for a creamier cheese sauce. To add even more flavor to my homemade mac and cheese, I add Parmesan to the Panko topping - so good!
