    1. Melt butter in large heavy bottom pan. (I use a cast iron dutch oven)
    2. Saute carrots until partially soft.
    3. Add pepper stir fry. Saute until onion is translucent and peppers are soft.
    4. Add bacon and cook until fat is rendered.
    5. Add garlic. Saute 1 minute.
    6. Add flour and stir to a thick paste. Add oil if to thick. Add more flour if too thin. Cook 2 minutes, stirring constantly.
    7. Stir in chicken broth.
    8. Add chicken, corn, salt and pepper.
    9. Simmer about 30 minutes, stirring occasionally.
    10. Stir in heavy cream. Do not allow to return to simmer.
    11. Top bowls with Tony's to taste.

    I made extra bacon to put in the chowder, along with sautéed mushrooms (my hubby's favorite). I blackened the fresh corn cobs and chicken breasts on the barbecue grill and topped the bowl off with the bacon and added caramelized onions. Stir in chicken broth, garlic, thyme, oregano, cayenne pepper and bay leaf; season with salt and pepper, to taste. Melt butter in a large stockpot or Dutch oven over medium heat.
