(if you want to add vegetables such as green beans and potatoes they can cook in the broth while the instant pot is cooking just throw them in.)

    Roll the meat up and secure with skewers or toothpicks. The secret to these pretty flank steak pinwheels lies in their butterfly treatment. Because the steaks are flattened, marinade isn't need. Open meat so it lies flat; cover with plastic wrap. Starting at the short ends, roll each skirt steak into a pinwheel.
