Even though Mama makes the same sweet potato casserole every year, she won't be offended if you bring these candied yams once she tries them. Lightly spiced and oh-so-sweet, these candied yams will become a mainstay in your Thanksgiving recipe lineup.

To get started with this recipe, we have to prepare a few components. You can cook candied yams using 9 ingredients and 7 steps. Here is how you can achieve that.

    Ingredients

The ingredients needed to make Candied Yams:

    1. Prepare 4 sweet potatoes, peeled & chopped
    2. Prepare 1 cup sugar, divided
    3. Prepare 1 cup brown sugar, divided
    4. Make ready 2 tbsp salt
    5. Take 2 tbsp vanilla
    6. Make ready 1 tbsp cinnamon
    7. Take 1 tsp nutmeg
    8. Get 2 tbsp water

It perfectly compliments that sweet flavor while bringing a nutty, caramel-like flavor to the dish. Candied yams are a Southern staple that are easy to love, but the first thing you should know is that they're not actually made with yams. A yam is a dry, starchy root vegetable whose skin resembles the bark of a tree. They can be difficult to find in grocery stores, which is probably why sweet potatoes are more commonly used.

    Instructions

    Steps to make Candied Yams:

    1. Turn stove on medium low.. Place the 2 tbsp water in bottom of pot and put in half the yams.
    2. Pour in half the sugar, brown sugar then add the 2 tbsp salt.
    3. Place other half of yams on top and put in rest of sugar, brown sugar, & all other seasonings.
    4. Place lid on HALFWAY. Don't cover completely.
    5. After about 10-12 minutes you'll see the sugar mixture boiling, DO NOT STIR. Simply flip over the TOP yams and gently push into the sugar mixture. Once flipped place lid back on HALFWAY for another 10-12 minutes.
    6. Turn off & remove from heat. Place cubed pieces of butter in pot and allow mixture to settle with lid on.
    7. If you want to add marshmallows, just pour mixture into dish & top with marshmallows, place in oven at 350 for another 10-12 minutes or until marshmallows melt.
