    It tastes like a mild version of Thai Red Curry - and requires a whole lot less ingredients to make! The flavour of the sauce isn't as kapow in-your-face, it is slightly more refreshing and not quite as rich. While the flavour isn't as intense, it doesn't mean that it's not as tasty!     1. Place the fish fillets in a large saucepan and add the lime or lemon juice with a pinch of salt. Set aside.
    2. While the fish is marinating, dice the onion and the peppers.
    3. Add to the pan the onion and garlic until it turns a golden colour, and then add the fish and fry a little bit.
    4. Top the fish with the peppers and tomato.
    5. Add the fresh coconut milk, coriander, spring onions and fresh chilli. Set the pan over a low heat and simmer for 25 minutes.
    6. Serve with brown rice, beans and cassava flour.
