    1. Chop all ingredients to about 1cm square (1/2 inch) and add to a suitable sized bowl

For faster meal, I plan to cut up the veggies the night before cooking, storing them in a gallon zip baggie. Combine the vegetables into a bowl and toss with olive oil, salt and oregano or basil. Use enough oil to coat all the vegetables well.
