    1. In a large sauce pan, heat the oil over med-high heat. Add the red bell pepper, corn, onion, and garlic; saute until vegetables are softened, about 5 minutes. (This is what I did differently…I used more red pepper and pureed it with the canned chilies.)
    2. Add cooked macaroni, green chilies puree, and cheese; stir until well blended. Fold in heavy cream, season with salt and pepper and serve immediately.
    3. Ready in 25 minutes
    4. Serves 6 or more if used as a side, otherwise around 4 as main dish.

    Green chilies are perfect as they add heat, but no so much that your mouth is burning. Something about that automatically elevates mac and cheese into something a little more elegant. Chili mac has to be pretty incredible for me to want to make it again. And since mac and cheese is always a favorite, I was especially insterested in a new spicy twist on that simple dish.
