We love this easy mac and cheese soup made with sharp cheddar cheese, broccoli, vegetables and elbow macaroni. The kids love it too, a great way to get kids to get more veggies in their diet.

    Instructions to make Mac and Cheese Soup:

    1. In a small stock pot add 6 cups water. Bring water to a boil. Add the 3 boxes macaroni noodles, setting aside the cheese packets. Bring back to a boil then lower heat to medium-low til noodles are tender, stirring often.
    2. Once noodles are tender add rest of ingredients to the pot including the reserved cheese packets n rest of the water. Stir til everything is combined. Heat til heated through and serve immediately.
    3. NOTE: Pairs well with a side garden salad or buttered crusty bread

    Cook pasta according to package directions. Once all cheese has been incorporated and cheese sauce is smooth, stir in milk, cooked macaroni, Parmesan, tomato paste, mustard powder, garlic powder, onion powder, and salt and pepper, to taste. I have so many memories of making mac and cheese casserole for Thanksgiving alongside my mom and sisters. Oh my, year after year we tried new recipes until we found the perfect one. We would even try making different recipes days before Thanksgiving so we could find the one that was "it." It was so much fun.
